You may fish where you would like to fish! Above are some suggestions. You can fish right from Whiskey Joe's Bar & Grill if you like. There is also a boat launch on the north side of the Courtney Campbell Cswy. and you can fish from there in the mangrove lined bay. Philippe Park is very good as is the Double Branch Creek. The Alafia River in Hillsborough is also excellent fishing and out of the weather if that becomes a concern.
